1/2 cup finely chopped red onion

discard all but 2-3 tablespoons bacon drippings.

Heat drippings in skillet over medium heat.
Add onion; fry for 2 1/2 minutes.

Add next six ingredients. Simmer about 5 minutes.
Remove from heat.

Add potatoes to skillet and toss to coat with dressing.
Let stand covered for five minutes.
Add chopped bacon and chopped fresh dill; toss.
Season to taste with salt and pepper.
Transfer potato salad to serving platter.
Serve warm.

Very basic:


12 boiled potatoes

I was JUST going to post a lengthy retort about those people who think
only southern germans can make a good potato salad ;-)

Carmen,
who makes most her potato salads with mayo and buys the one with
vinegar for use with fish

Aha! I always wondered how we got the idea of mayo for
potato salad... the Germans. Live & learn!
