4 pounds medium-size red potatoes, unpeeled,
cut into 1/4-inch-thick slices
12 oz package of apple or hickory smoked bacon, chopped
1/2 cup finely chopped red onion
1/2 cup unsalted rice wine vinegar
1/2 cup water
1 tablespoon Dijon mustard
1 tablespoon brown sugar
1 tablespoon salt
1 teaspoon ground black pepper
1/4 cup chopped fresh dill
Steam room temp potatoes in already steaming steamer for 9 minutes.
Transfer to large bowl.
Fry bacon in large skillet over medium heat until brown, about 4 minutes.
Transfer bacon to paper towels, A slotted spoon works best here.
discard all but 2-3 tablespoons bacon drippings.
Heat drippings in skillet over medium heat.
Add onion; fry for 2 1/2 minutes.
Add next six ingredients. Simmer about 5 minutes.
Remove from heat.
Add potatoes to skillet and toss to coat with dressing.
Let stand covered for five minutes.
Add chopped bacon and chopped fresh dill; toss.
Season to taste with salt and pepper.
Transfer potato salad to serving platter.
Serve warm.
