Default Apple cake with MEAD (Italian way)

APPLE CAKE with MEAD (Old Family recipe)

270 gr flour - all purpose
250 gr. sugar
180 gr. butter - liquefied
3 eggs - yolks (+ 3 eggs white)
1/2 cup mead - (or rum)
1 package yeast - for cake
4 "renetta" apples
2tbs sugar - for apple
3 tbs lemon juice
1 cup breadcrumb - for the cake tin

First of all prepare apples (prepare them at least 1/2 hour before): peel
apples and then cut them into 4 quarters. Take one quarter at a time and cut
it, beginning from the short side, into 1/4 '' (6 mm) slices. Cut in this
way all the other quarters. Put the slices of apples in a bowl and cover
them with 2 tbs of sugar and 3 tbs of lemon juice. Let them sit .
MAKING CAKE.
Put egg yolks, liquefied butter and sugar in a food processor. Mix for 2
minutes then add flour and liqueur and mix till the dough is well combined.
Then add yeast and mix again.
Preheat oven at 320°F (160°C).
Butter a 10'' (26 cm.) diameter cake tin and cover it with breadcrumb (or
flour if you don't like breadcrumb). Put the mixture in the cake tin.
Take one apple slice at a time and put it vertically in the dough. Go on in
this way, making circles starting from the rim, toward the centre.
Put in the oven and bake till cake is golden coloured (about 30-40 minutes;
it depends on ovens). BTW, when you think it is ready, make the toothpick
proof.
