Default green tea and brewing

Hi, my son regularly gets sent some green tea from a friend in japan. it's
very good and much better than anything i have been able to buy in the u.k.

the question is how best to make it. most say to use the water at
temperature 80 c, but i have heard several versions on how best to proceed.
one is just use the leaves once and others have said the first brew pour out
after 20 secs, the second pour out immediately and the third brew let stand
for five minutes.

any advice on what people find is a good way to brew green tea please?

A lot depends on your preferences and the nature of the tea itself. There
are many different styles of green tea. We pour briskly boiling water over
the tea and steep for a minute or so. The leaves can be reused (soon, not
the next day!) with some decrease in quality. Experiment and see what you
like.

I use very hot water, just below boiling. The trick with Green tea is to avoid
or remove the leaves before the brew turns bitter. This usually begins to
happen after about 3 to 4 minutes.
