Default Pesto

I finally made a batch of pesto to freeze. DH is iffy on the basil
despite the fact he loves it in spaghetti sauce and other tomato
dishes. I use it quite a bit. Apparently he didn't like it fresh in
his sandwich so I was concerned that he wouldn't like pesto. I must say
the pesto can out very tasty! I'm sure he will like it. I used almonds
for the nuts since pine nuts are hard to come by here.

Hope it goes down well, How did the almonds work out for you.

Pesto sauce is also really nice with chicken.

I often use walnuts in pesto since pine nuts are very expensive! I love
pesto.

Hope he enjoys it! Walnuts are another nut substitute (same softness). I
discovered pesto last November. It's wonderful stuff!!!

All the best,

It's ok to use curly leaf for half (or all) of the basil and English
Walnuts. I've seen numerous recipes using these ingredients.
I think it's quite good and a nice change.

Unsalted cashews work well too.
