Hi,
A few years ago I found a Zucchini Salsa recipe for canning. The post tittle called it "Ass Blastin Salsa", and it was very good. To make the story short, we have ran out, and lost the recipe. If anyone has this or somthing like it please send it to me. Thanks Josh |

If anyone has > this or somthing like it please send it to me. > Thanks > Josh A Google search (zucchini salsa) in the RFC archive brought up this recipe, among others Posted by Lynn Connors on RFC 8/12/92 Zucchini Salsa 10 c grated zucchini 4 onions 2 green peppers 2 red peppers 1/4c + 1 T coarse salt Chop everything. Mix together and let stand overnight. Rinse with water and drain well (press). Add: 2 T dry mustard 1 T garlic powder 1 T ground cumin 2 c white vinegar 1 c brown sugar 2 small cans tomatoe paste 2 T chili pepper (or 1 T crushed chili & 1 T chili powder) 2 T cornstarch 1 T nutmeg 1 t pepper 1 t turmeric 5 c chopped tomatoes Boil well, then simmer for 15 minutes. Pour (hot) into jars and seal. |
