Default Impossible Chicken Pie

Impossible Chicken Pie


Ingredients:

1 Broiler-fryer chicken, cut in parts

1/2 Tsp. basil leaves

2 cups Water

1/2 cup small curd cottage cheese

2 Tsp. salt, divided

I cup shredded Mozzarella cheese divided

2/3 cup prepared biscuit mix

1 cup milk

I can (6 oz) tomato paste

2 eggs

1 Tsp. Oregano leaves

1/4 Tsp. pepper


In deep saucepan place chicken. Add water and 1 teaspoon of the salt- Cover
and simmer about 45 minutes or until fork can be inserted in chicken with
ease.

Cool.

Separate meat from bones . Discard bones and skin. Cut chicken in
bite-size pieces and place in large bowl; add 1/4 cup of the Mozzarella
cheese tomato paste oregano and basil; stir to mix and set aside.

In a lightly greased large quiche dish or deep-dish pie pan place cottage
cheese and spread evenly. Place chicken mixture evenly over cottage cheese.

In bowl, place biscuit mix milk, eggs, pepper and remaining 1 teaspoon salt;
beat 1 minute with hand mixer.

Pour over chicken mixture Bake in a 350° F oven about 30 minutes or until
brown and a knife inserted in the center comes out clean. Remove from oven
and sprinkle remaining ½ cup Of Mozzarella cheese. Let set 5 minutes before
serving.

What's the cottage cheese do, Ed? Sounds swell except for that, The
mind boggles.

While I despise eating cottage cheese, in some recipes the texture gets
changed and it is OK.. I think it helps thicken things here.

Well, I , for one, will actually be trying this in the near future.
All it can do is kill me, eh? Sounds very simple and edible. Course
after 14 months off of fast food, I'm pretty much an accident waiting
