There was a thread here recently about chicken (or maybe it was veal)
*parmesan*. I always thought the correct term was *parmigiana*. Am I wrong? Are the terms synonymous or are they two separate dishes? If separate, does anybody know the derivation of the two words? The derivation is "from" or "in the style of" Parma, an Italian comunity in the region of Emilia-Romagna. gloria P |

When I discovered freshly grated Parmesan there was no going back to the canned crap. Due to the high cost of the real McCoy Parmigiano Reggiano I tried a local made "Parmesan" cheese. It was about half the price, but I was not impressed with it and went back to the real stuff. |

Unless your cheese purveyor cuts your wedge of Parmigiano Reggiano from the wheel directly in front of you don't buy it... pre-cut Parmigiano Reggiano is an abomination. Sheldon |
