Stop right there - that's just about all you need.

For a large crock-pot 2 Tablespoons of vinegar (rice or white wine would be
good) that's it. Ok a little celery just to round out the mirepoix.

I have found that adding a little hot sauce sparks up the flavor, too. I
cook beans all the time - not for me but for DH, who loves them - yes, and
with cornbread.

You gots it with the bay leaves and cracked pepper. Now what you need to do
is bake some cornbread to go with the beans.

1 c. yellow cornmeal
1 c. flour
1 Tbs. sugar
4 tsp. baking powder
1/2 tsp. salt
1 c. buttermilk
1 large egg
1/4 c. butter or shortening

Blend dry ingredients together and mix in shortening or butter. Add egg and
milk until you have a rather lumpy batter. Pour into a greased 8" skillet
and bake at 400F degrees until gold brown, about 20 minutes.

A bit o' garlic and some molasses would not be out of place, especially
if you had started with black eyed peas. Hopping John is one of my
faves. Celery & green pepper also come to mind. Turnips?

Damn, that sounds good, Michael! It's a nice day here, but my feet are
freezing. (I guess I could put socks on). What I wouldn't give to have
some beans and cornbread tonight...I thawed some steaks overnight...odds and
ends....leftover end pieces from a tenderloin, and a strip steak that never
got cooked one night. Better put some potatoes in the oven....and I'll
throw together a Caesar salad....it'll be good, but it won't be beans and
cornbread...

Enjoy, Michael! Put on some old baggy sweats and some big thick socks, and
dig in!

Meeeeeeeee! I'm still up for beans. It's chilly and rainy here -- my back
yard looks like a swamp (which thrills my Shrek-loving 8-year-old to no
end).

We will have a good dinner -- I made beef stew and some pumpkin muffins.
Wanted to make homemade roasted apple-pear sauce, but never got around to
buying the fruit. It was just too yucky to go out and drag 3 kids around.

Anyway, when my husband comes home from work, I'll put my sweats on and come
over.

Freeze, Freeze, Freeze those planned overs. Cook extra at your meals, then
pack it into the freezer. Check out some of the 30 day gourmet, or friendly
freezer cooking websites. Those days when everything has gone badly, you're
exhausted and just don't want to bother, take a meal from the freezer, pop
it into the oven (or stovetop pan) and wow, dinner with no effort.

For example, the bean soup - it only improves with age. Pack some up in the
freezer along with some of the cornbread, think about next Monday, day after
Easter - if you celebrate it - if you've dealt with family, sugar crazed
kids, and need some R&R. Just pull out your nice batch of soup and bread,
throw the soup into a pan, the bread into the microwave to defrost and
dinner is served.

Am I reading that right? You're not eating beans because you're
trying to keep your cholesterol down? Everything I've ever heard/read
claims beans will help lower cholesterol. They have no cholesterol.

We are a little spoiled here in L.A. We get fairly good (expensive) vine
ripened tomatoes from somewhere year long -- Central America or
hot-house here in the U.S.
