Default [REC] Creamed Sausage & Potatoes

This is an old (circa 1950's) recipe that I made last weekend
and took to my parent's house for dinner. Rather than continuing
cooking as the directions state, I put everything in a casserole
dish and let it cool. When we got there, we baked it for half an
hour or so at 350 F. Served with salad and rolls, very good!

Creamed Sausage & Potatoes

2.50 T. butter or margarine
1.25 C. chopped onion
2.50 T. flour
1.25 tsp. salt
1/4 tsp. pepper
2 C. milk
1 C. Half & Half
1 pound cooked kielbasa sausage, cut into 1/2 cubes
5 C. diced, peeled potatoes, cooked
2 T. chopped fresh parsley or 1 T. dried

Melt butter in medium saucepan with tight fitting cover; saute
onion over low heat 10-15 minutes, or until tender. Blend in flour,
salt, and pepper. Slowly stir in milk. Cook, stirring constantly,
until mixture thickens and boils 1 minutes. Add sausage, potatoes,
and parsley; cover tightly. Cook 5-10 minutes or just until mixture
is heated through.
