I'll be making chicken 'n rice for my wife's office party. Be lots of
other stuff there, but I'm trying to figure how much rice per serving. I'm thinking 1/2 to 3/4 cooked rice per person. Input??? Also, I usually use 1 3/4 cup fluid per cup of rice (Jasmine) and it works great. Can I just multiply by "x", or do I need to make adjustments to the fluid/rice ratio? Thanks in advance. Without knowing what other foods will be served and how many guests it's difficult to say... with other starchy foods available, ie. potato salad, macaroni salad, and other pasta dishes, even sandwiches, a lot of folks may not touch the rice... but rice is cheap, so if you follow your Sig line you'll cook extra, use enough rice to at least balance the quantity of chicken you'll prepare... you don't mention how much chicken either, or even a hint of what chicken and rice recipe. I've never had any problems with doing that. Jill |

1/2 cup of uncooked rice yields about one full cup. If there's other
food there, you can presume people will take about a scant 1/2 cup maybe less. The rice to liquid ration for a pilaf is always 1 to 2. One cup rice, two cups liquid. 2 cups rice, 4 cups liquid. Bigger amounts than that I may reduce the water slightly. Obviously for a softer rice you need more liquid. |
