Default Mr. Turkey Lurkey...

The sky ain't falling but the oven door is shut and yoose a'cookin'! Yup, been
roasting away since 7am.

Last nite I was getting kinda worried Mr. Turkey Lurkey wouldn't defrost in
time so at 7pm I filled the kitchen sink with cold water and put him in for a
swim... Now I have a deep kitchen sink (8") but still the water wouldn't cover
completely, so I covered him with a towel to keep his exposed part wet too.
Got to be 10pm and had to make a decision, do I put him back in the fridge till
morning or do I open him up now. I opted to open him so I wouldn't need to
fuss so early in the morning. He was nearly thawed, ran some water to get the
giblets and last bits of ice out, cleaned out those horrid blobs of blood and
was all ready to season. Dried him out well inside and out with paper towels
and bathed him well inside and out with a fresh lemon, placed one lemon half
inside and the other in the neck cavity... inserted pieces of carrot, celery,
and a couple garlic cloves and some parsley sprigs. Rubbed inside and out with
Penzeys poultry seasoning, lotsa black pepper, and some salt. Trussed up his
legs and sprinkled with paprika. By 11pm he was back in the fridge. Next time
I chose a 23 pounder I gotta leave five full days to defrost.
