![]() I had a Costco rotisserie chicken delivered with my groceries yesterday. I stripped the carcase today and also sort of cleaned out the fridge of bits of onions, celery etc. I've got that simmering now. As soon as the broth is done I'll add the rest of the ingredients. I've got a nice pile of chicken schnibbles from picking the carcass. The fridge is bare except for condiments. This way the fridge is ready for turkey leftovers tomorrow. Did you see the suggested way to use up turkey leftovers? Make waffles out of the dressing. Bread the waffles in 4 pieces. Spread one piece of waffle with leftover mashed potatoes, top with sliced turkey, then cranberries then a lid of waffle. That doesn't sound good to me at all. I'm one of those kids that grew up with different foods were not allowed to touch on my plate. I guess this idea has been around awhile. Janet US |

But the idea of a toasted turkey sandwich using stuffing for bread sounds worth a try. Thanks. |

Thanks. > A few years ago I was on a flight to the west coast and made the mistake of of eating a chicken sandwich that had chicken, stuffing and pesto. What a horrible combination it turned out to be. |

I only had stuffing once as a kid. We went to the Yesteryear restaurant for Thanksgiving. I normally loved that place but they put oysters in the stuffing. Blech. IIRC, there wasn't a thing that my brother or I liked about that meal. I'm not sure when Stovetop came out out but I do remember my mom started making it when I was in high school or a young adult. My brother loved it. I wouldn't touch it. I do make stuffing now as other people seem to like it. I don't get creative with the leftovers. I just put the stuffing in a dish, then top with turkey and gravy. I hope not to have many leftovers this year as my fridge is freezing most everything and the new one won't arrive till the 30th. |

He also eats everything sequentially. OTOH, how he eats his food is probably the lessor debilitating of his many foibles. I like to eat and do things in a semi-random fashion so I can't say what I'm going to be doing tomorrow. Normally, we'd have a clan feast but I noticed some balking on the part of my son and his family. Who can blame them? I'll probably bake some sweet potato pies and give one to my friend and just show up at my step-mom's house with KFC. The sweet potato pie is simple - make up a pecan pie but use canned sweet potato pie instead of pecans. Yesterday I had seared ahi with wasabi aioli from Fresh Catch in Kaneohe.
