Default November 3, 2020 Dinner

Sea Scallops, pan seared in butter. I've actually been waffling a bit
about keeping them fairly plain or topping them with a sprinkling of
panko breadcrumbs. Add a little of crunch/texture without deflecting
from the sweet taste of the scallops. Yeah, I think I'll go with that.

I'll be having smashed roasted red potatoes to go with it and steamed
broccoli florets as the green vegetable side.

Yum. Sounds delicious. We had a toasted barley and wild rice chicken
salad. I smeared yogurt and curry powder on slices of cauliflower and
broiled them, and we had some steamed asparagus.

This is my first dinner since Thursday night: On-Cor Salisbury
steaks and pan fried kluski noodles. I was going through drug
withdrawal since last Tuesday and was so sick I couldn't sleep or
eat. Finally said **** it and went back off the wagon Saturday
night. Scoured the kitchen for something I felt like eating for two
more days until this morning I saw that last piece liver in the
freezer and my brain said - "I Want That", so I had liver and onions
with horseradish sauce for breakfast. Then went to my rabies program
and stopped at the grocery store on the way back for something easy,
hot, plentiful, and cheap. And there we have it - I'm eating it
right now.

TMI? Probably not.

It was pinto beans with cubed ham cooked with them, sliced tomatoes,
and cornbread. Yuck on the beans, I gave my serving to my brother.

A salad with pepperoni on it, dressed with red-wine vinaigrette. Garlic bread.

Black beans are our favorite for making refried beans, mashed in the
pan used for frying pork chops. We don't drain them, simply mash
until the liquid is reduced and the beans are the consistancy we like.
Place the pork chops back just to reheat.
We buy canned black beans by the case, usually on sale at BJs, we do
most of our bulk shopping at BJs... they also carry excellent produce,
the only one around that sells Chef Grade Russets, Green Giant brand
sold in a seven pound bag so not more than we can use. Each potato
weighs a pound or more, I'll bake two with a roast and we share one
spud.
We don't have potatoes with refried beans, we eat the diced pork with
refried black beans with corn tortillas. The meaty loin chop bones
are a cook's treat, my wife would like to but won't dare risk her
dental work. When Shoulder pork chops are on sale I'll buy a family
pack, about 6 pounds, I trim away the excess fat for the crows and
braise the meat and bones in canned crushed tomatoes with spices until
the meat falls off the bones to make the best pasta sauce there is.
I'll fill my 12 quart pot and freeze most... canned tomatoes are
another item we buy by the case; crushed, whole, diced. I can't
remember the last time I bought a jar of pasta sauce, has to be forty
years ago... salty reddish sludge.
