I got a late start on this dish; I just put it in the oven. It needs to
bake for a little over an hour at 350F. I do love eggplant parmesan. I don't use a lot of tomato/basic marinara sauce but the amount is up to you. I do prefer using thinly sliced *fresh* mozzarella and coursely shredded parmesan cheese rather than shredded or grated cheeses for this dish. I got my appetite back. I won't be pausing to take pictures because I'm hungry! ![]() Jill |

You'd be more than welcome but if I knew you didn't care for eggplant I'd make sure to cook/have some other food. It's not as if my freezer and pantry is empty and choices are limited. I do like eggplant parm and I think the fresh mozz makes all the difference. But hey, if you don't like eggplant, all the covering up in the world with toppings won't matter. I like thinly sliced eggplant (peeled), an egg wash then dredged in seasoned flour and breadcrumb mixture, pan fried. That's something I haven't done in decades. First you have to sprinkle the sliced eggplant with salt to draw out the moisture... then thoroughly rinse and pat dry. Then, you do the egg wash and flour and/or crumb mixture, let dry a bit on waxed paper then fry like green tomatoes or crumbed, fried yellow squash or zucchini. Jill |

I was not a fan of eggplant until quite recently. I had previously thought that the only palatable way to prepare it for consumption was to make baba ganoush. Lately I have been using it to make vegetarian chili. I once had an incredible pizza that had goat cheese and eggplant and it was delicious. I started to use it on my home made pizza. |

There are foods I grew up with and did not like until they were prepared in another way. Sweet potatoes, butternut squash, cauliflower come to mind. I recall some years ago having dinner with friends and she made cauliflower. To be polite, I took a small serving. After tasting it, I went back for more. If the eggplant has too many seeds I scrape as many as I can off the slices. Jill |

I've always been trusted by women not to cross the line. I've always had female friends, both married and single. Never more than a hug and goodnight kiss. I'm sure people talked when married me would pick up married friend and we'd go out. It would be for something neither of our spouses had interest in. Women at work would often want me to escort them to work related functions, dinner, whatever. That goes back many years and was good for some laughs when people tried to pry. Hope to go back in a few weeks to spend another week with my one friend again. We had a great time enjoying each other's company. Separate bedrooms. She trusts me. |

I wasn't expecting the camera so I didn't put on a fake "I'm thrilled" smile. My mother took that picture (parents were visiting). It was shortly after I got home from work. I did have a knife in my hand and that was my kitchen. I was also still wearing the nice dress I'd worn to the office. I needed to get at least a quick start on some prep done before I went and changed my clothes and got down to cooking. I wasn't expecting to have to smile like a beauty queen when mom surprised me with the camera. Doesn't warrant a comment like you'd "do me". Now you're backtracking. At any rate, when I posted that pic I was showing the Galley Style kitchen I really liked. Pretty much a perfect kitchen triangle, lots of cabinets and storage. Also a lazy-susan lower corner cab which was perfect for storing dried herbs, spices and bottles of cooking sauces. I even liked the linoleum floor that looked like dark red brick and the pineapple wallpaper. Because the kitchen layout *worked*. Jill |

Eggplant has a very subtle flavor, any cheese overwhelms the eggplant flavor. we grow a lot of eggplant, different types, grilled over high heat works best. I make very tasty vegetable soup with chunks of summer squash and eggplant |
