I love sweet onions but I don't buy more than I can use in 6-8 weeks... as the safe keeping date approaches I cook something that uses onions and then freeze it, onion soup freezes well, as does caramelized onions. The onion farmers extend the life of their crop by selling them to the large food canners like Campbells... they actually sell them before they plant them, and then use that contract as collateral for financing their growing. Much of the food industry operates that way... farmers are not going to raise hogs without having a contract with a company that sells pork products.... hog farmers are happy as a pig in shit with a contract to supply pork for producing SPAM and bacon. |
