Default Bagels

made these twice. Nice.
Eating w butter. Too lazy for cream cheese

1 and a q warm wter 110 ish. 1 tb malted barley. Bought it on Amz for 12 bucks, sucker that I am. 2 and 3.4 yeast
5 min foam or use intant no proof needed, just add to mix.

4 c Bread flour. Need BF, AP to light.
2 tsp salt into flour.
Mix 2 min with spoon, drop out onto floured counter top.
Knead 4 to 5 min.
Check utube vids for how to do this shit. It helped me.

Rise till double in a big oiled bowl, ball oiled too.
Punch down air
Cut into 6.7 pieces
Ball, stick finger through mid and swril a bit.

In your cast iron 12 to larger, 2 q water and tb malt
Boil 1 min ea side

Egg wash top and side

Bake on parchment 350 for 20 or golden.

Fn wow.
