I was craving chicken soup but our temps. have been around 60 degrees so not
really cold enough for soup. For me anyway. I decided to make a casserole. I used Sam's Choice Boxed Bone Broth (chicken). Started with a large white onion, three carrots, and the middle of a stalk of celery (including leaves). Caramelized those in a bit of olive oil, then covered with broth and cooked till soft. I put those in a casserole dish along with a can of chicken. Can't remember what it's called now as they keep changing the name but the Sam's brand. Just water and chicken. Also a can of peas (drained). Cooked two cups of cheap, white, long grain rice in whatever broth was left in the pan plus enough water to make 2 cups of liquid. I then made a sauce using 1/4 cup butter and enough sweet rice flout to make a nice thick paste, then thinned it down slowly, cooking and stirring until I had a sauce. The sauce was on the thin side. I had intended to add milk but since it was so thin, I added some medium cheddar cheese, shredded. Seasonings (added to each step along the way and to taste) were a little garlic, salt, pepper and parsley. Mixed it all together, added a bit more cheese on top and baked. There is quite a bit! I won't have to cook for a few days. It's very good! And Bruce should like the ingredients! |
