potatoes and dumplings
my mum makes these once in a while. you need to make a spaetzle dough for the dumplings. the dough is scooped off with a spoon and dropped into boiling water. repeat...
the potatoes are made as though you are making a hungarian(not north american)goulash. saute onions/garlic in bacon fat or lard(traditional)or you can use cooking oil. add tomato paste, salt, turn heat down and add hungarian(or other paprika[not all paprika is for my taste; i bought some lebanese paprika once; uch]). add cayene or hot paprika if you desire. add cubed potatoes. stir around a little bit. add chick stock or water. bring to simmer and cook until done. add the dumplings to the potatoes. there you have it. simple and effective. i've made it before, but didn't use homemade dumplings. i use the bow tie pasta. no recipe here, just use your experience.
if you need recipe, they're all over the www. the hungarians like to put sour cream on top of their paprikash potatoes, but i don't bother.
