I can't give any advice on this since it's not a dish I'm familiar with. It seems goofy to me but that's just my opinion based on my very localized culinary experience. It sounds like something people on the mainland would cook back in the 80's.

As far as chicken goes, Asians in general consider the breasts to be not desirable as far as meat goes. I don't know why that it is, it just is. Maybe because it's kind of tasteless?

No offense intended. What I can tell you is that if you're looking for an American style recipe, that certainly sounds authentic in an 80's sort of way. Your alteration sounds like a good one. I'd probably not cook that pineapple for so long but I've never done something like that so who knows. Good luck!

If I were making this the first time, I would go with what I think you
consider too little soy sauce. Soy sauce is usually way overdone.

One thing for certain, the bottled bbq sauce is way WAY too much.... I

You are very kind. Thank you. We have (only recently) learned to love soya
sauce, so that doesn't worry me too much.

As I said, I put in several 'glugs'

We have just eaten it and it was very good. The soya sauce didn't seem to
overwhelm it at all, but maybe that is because we have become used to it.

Hi Ophelia, you probably got it right. 1 teaspoon soy sauce will do
nothing in a dish of that volume. You have 3lbs of chicken and 33.5oz
sauce already. "several Glugs' is right.

I'd have reduced the other sauces to 1/2 and added 4-5TB soy sauce.

Oh yes! For the rest, a glug is between 1-1.5 TB normally. It's
eyeball cooking for folks who cook all the time
