Default Apple Trees and baking

Thought some might find these useful!

Those with apple trees here are getting a huge crop. Here is some of
what I am doing with them.

MMMMM----- Recipe via Meal-Master (tm) v8.05

Title: Xxcarol's apple bread
Categories: Xxcarol, Breadmaker
Yield: 16 Servings

2/3 c Milk
2/3 c Chopped apple (peeled/cored)
2 ea Eggs
2 tb Water
2 tb Cut up butter
4 c Breadflour
3 tb Sugar
1 ts Salt
3/4 ts Cinnamon
1 1/4 ts Yeast

Place all ingredients in the bread machine and set to dough mode.
Remove when done and let rise in large pullman type loaf top with the
lid off for 1 hour. Preheat oven to 400F then add pan and bake 17
minutes.

Makes an excellent toast bread!

Optional, can make these into little mini-buns (about 20) and freeze.
Toaster oven perfect for a single person!

From the VB kitchen of xxcarol: 28Jul2018

MMMMM

MMMMM----- Recipe via Meal-Master (tm) v8.05

Title: Xxcarol's Apple Manna
Categories: Xxcarol, Fruits
Yield: 6 Servings

1 1/2 c Cut peeled and cored apples
1/4 c Brown sugar
3/4 c White sugar
3/4 c White flour
1/4 ts Salt
1/2 ts Cinnamon
1 ea Egg
1/3 c Melted butter

This one is great on a rainy day. It doesn't take long at all to
make and uses nothing all that unusual.

Peel and core your apples then cut to size you like and line a square
glass dish with them about 1/2 or more inch deep. Add brown sugar and
toss about. I add some of the cinnamon here too.

Next mix the flour, white sugar, rest of the cinnamon, salt ans stir
that then add the egg and mix. It will seem a little dry but don't
worry. Spread this evenly over the apples then add your melted butter.

Oven at 375, takes about 45 minutes but some variation depending on
how much apples you had there.

Suggested sides: Nothing like a good slice of cheese at the side!

From the VB kitchen of xxcarol: Typoed to ya 28JUL18 but made for
decades

I made a French Apple Cake last w/e and it was delicious. I didn't want
to buy the Granny Smiths that were available so I used all Galas.

https://www.bakefromscratch.com/fren...e-almond-cake/

I used Calvados, French apple brandy.

The excess egg whites were turned into Forgotten Cookies.

Yes! It is available in some places but it's really a syrup rather than
the usual thin essence and contains the seeds. I had some and used it
up. I then rinsed the bottle out with vodka and added it to my home-made
vanilla essence.

I use the Nielsen-Massey, very good. It's sort of thick with specks of the
vanilla bean in it.

Looks good! I mostly am making what some call an apple crisp I think?
Simple and easy to do.

As do the French. However, if one of yours is a tart variety, I think
the result will be tastier.

Yes. I believe there are recipes on the web but I follow one by Orlando
Murrin in "A Table in the Tarn".

https://www.bbcgoodfood.com/recipes/...gotten-cookies

Remember that UK L eggs are XL in N. America so if you use large, cut
the rest of the ingredients by ~20%.
It's also important to have a thoroughly pre-heated oven.

You are fortunate. British Columbian apples aren't ready yet so I
couldn't use Granny Smiths.

While I may be cropping out early. It was a warm spring and a wet
summer.

I've been making all sorts of things with them!
