Red Beans & Rice:

Today I still had a hankering for beef so I browned a couple of chopped
round patties, then slow cooked them in the oven (covered the baking
dish with foil for about 40 minutes) in beef gravy:

I've only had red beans & rice once and it was knock-
your-socks-off delicious. That being said about 2 weeks
ago I bought a can of "Margaret Holmes" red beans & rice.
How disappointing, utterly disappointing when about 3 days
prior I had eaten her brand of seasoned field peas & snaps
and they were 'lick the plate clean' good.

Looks mighty good 'cept for those green beans. I just don't
care for french green beans. But if you were to sit that
plate down in front of me I'd dig in without hesitation.

I've never seen canned red beans & rice. Margaret Holmes brand of other
canned beans, sure.

I'm sure you would eat them because you're polite. I don't like most
canned green beans unless they're the french cut type. Even then, I
only eat them a couple of times a year.

Thanks! Easy and tasty. I used that old tupperware hamburger press my
mother gave me to form the patties.

Now I have more leftover mashed potatoes. Oh dear, should I make potato
pancakes (yes, it calls for an egg) again? Should I call them potato
croquettes? Hmmmmm.

For the record, I never once even considered sleeping with you. And
you know that. You're the one who somehow got the idea that I was
going to move in with you - and you posted that to RFC just out of the
total blue.

After having met you twice at casual austin.food gatherings 2 or 3
years ago and not giving you any indication that there was any sort of
romantic interest in the least, you somehow twisted that into MY
MOVING IN WITH YOU?

That was just way too Psycho for me. I sat there at stared at the
screen for at least 15 minutes wondering, WTF? That was just way too
spooky. I've met weird, semi-psycho women before but you win, hands
down. Mapi of austin.general still holds the male title, but at least
he announced his psychosis right there lying on the floor of the bar
at B.D. Reilly's rather than romantically obsessing over me for 2
years.

Needless to say, you need to come to terms with what happened and why
your mind works that way and stop making up excuses for your fixation
and disappointment before we become the next Yoli and Michael. I'd
prefer you use a sniper rifle on me from a few hundred yards away.
There you go - a reason for you to buy yet another gun and ammo.

And Jeremy, I was just tired of your decade of bullshit and visions of
grandeur about all these things you're "working on" or have not done
in the past. Even posting a call for meetings with imaginary people
about imaginary projects of yours at "the normal time and place", as
if you are somebody important with a life. I'm pretty sure you're
manic depressive mixed with habitual liar.

Sorry I don't fit either of your Ideal Psycho Pal Profiles.

So every oven in SC vent outside? I think Jill needs to answer that

True enough. Besides, if I'd done it on the stovetop I'd have had to
keep an eye on it, perhaps stir it. The electric burners on this old
stove aren't always consistent. Put it in the oven, all I have to do is
set the timer and go do other things for a while. :)

It shouldn't be worn out. People keep dough in the fridge for a
couple of weeks. Are you proofing at too warm a temperature? (80F) Or
(if rising in the fridge) are you not allowing enough time for it to
rise? Put out a PING to Graham, Boron and Ophelia. They all do no
knead. I haven't done no knead in a while and I never had any
problems.

I don't have any problem with a second rise with my no knead dough. In
fact when I made my last lot yesterday I had it on a table a bit near a
radiator and it just about climbed out. I don't usually put it there but I
was busy with other cooking and needed it out of the way.

Are there special models of ovens for sale in South Carolina. Every
(electric) stove I have ever owned or used has come with a vent through
a stove burner.

Only ones i know of are a hood anove them that you turn on. If you
don't turn it on, no exterior venting going on.

If I were going to do at 14-16 rise, it would be in the fridge. IMO,
at those temps the dough needs to be fed again with some fresh flour.
But what do I know, no-knead isn't really my wheelhouse. You need to
do a Ping.

But more importantly you are also an artist - and that is where the
magic goes in.

It's interesting to think of how valued you would be in a nation like
Belgium or Switzerland where being a chocolatier is a venerated and
lucrative profession.

Yet here you get titters of mockery from the bully belt and outright
health department threats from Sqwertz!

That's totally mental.

Don't suppose you could show us that section? I've not been able to
google it. I also never saw one venting outside from 1975-1983. I saw
hoods (optional) that tyou could place above them and those vented
outside, but that's not the same as the stove doing so. Thats an
optional cover piece.

There is a vent from the oven that exhausts through one of burner bases.
When your oven is operating you can feel the heat coming up through it.
Pots left on those burners will heat up.

Umm, ok if you say so but I've never noted this on any standalone
stove/range yet. THats also not the same thing as venting 'outside' as
in outdoors as was indicated by the thread?

Someone upstream commented about heat from an oven not being wasted
because it helped heat the house, to which a rocket scientist responded
that it was an inefficient way to heat and that in SC all ovens are
vented outside.

My Bosch gas range vents the oven through a slot at the back-left of the
cooktop. It's a great location for warming plates.

About the same here. My gas stove vents the oven through slots on
the back of the cooktop (a 9" vent right in the center). Then
there is a plain hood over cooktop. On the wall between hood and
cooktop is a vent to the outside with an exhaust fan.

Feel free to investigate the next time you use you oven. There will be a
vent somewhere that allows heat to escape from the oven. Stoves with
electric coil burners usually vent through one of the element pots.
Glass tops often have a grill on the the console. The claim was that
ovens have to be vented outside in SC. All ovens are already vented into
the kitchen.

That said, I'm pretty sure that code requires a gas cooktop or range
to have additional ventilation to carry combustion gases to the
outdoors. Electric cooktops or ranges can have those pitiful
recirculating fans.

I found code for VA that says that range hoods must be vented outside,
but nothing to say that hoods are required in private kitchens.
