Default I can't stand it!

"Oh-oh, I can't stand it...."

Sorry. Got off ona Clapton-y sidetrack.

What I can't stand is being unable to get a decent tamale!!

I lived in CA, too long. You could buy Mexican anything, anywhere, anytime,
fer cheap. I bitch about tamales, but at least I knew where to get a
good one, even if I hadda drive 35 mi to get it.

So, looks like I gotta make my own. 8|

I got a bone-in pork roast and some ingredi-ments (love that British
variation) to make 'em into carnitas, which I've done many times b4.
But, even though I can buy masa, probably even some corn husks, and I
already have some organic lard, it's not gonna be easy.

I've made 'authentic' Mexican tamales, before. Helped my late
mother-in-law's sister make 'em (CA native born Mexican). Whatta let
down! They make 'em, --by tradition!-- where the masa is plentiful and
the meat is scarce. Jes like I don't like!

So, any rfc regulars got a good recipe fer a plump, well meated,
tamale? I'm into cooking, today!!
