Default Chuck eye steak

I know it seems weird that someone my age would have never had a chuck eye steak but tonight I had my first one.

I bought some steaks from the used meat bin. Tonight, since it was just me for dinner I went into the freezer and got out a steak for dinner. After I thawed it out I realized that the label said it was a chuck eye steak, I had labeled it a rib eye.

Well, I am a convert. It was supremely tender and delicious. I roasted some Brussels sprouts to have with it.

Best steak I've had in a very long time.

Yes, I love chuck eye steaks, and have them often. I've noticed the price
going up and up, so other people must be liking them too.

I used to have those all the time, they were cheap and delicious.

But I can't say I've seen one in quite a while.

Sounds good to me, it's the season. I will pick some up soon.
We'll probably bring them for Thanksgiving.

Back when money was tight, I'd buy 7-bone chucks to braise with an eye
on how large the eye muscle was. I'd remove the eye and freeze it
until I had another one - then we'd have a steak dinner. Good eats!

A butcher clued me into it decades ago. Find a bone-in 7-bone chuck
roast that is 3 muscles, two of them are tough and one is tender.
Look for the 7-bone with the largest eye. It's the same concept as
Porterhouse (which has a portion of the tenderloin) and t-bone (which
has an ever shrinking filet until there is none).

Chuck steaks have been my favorite forever, much more flavorful than a
'blah' ribeye. I usually buy those with the bone, about 1 1/4" thk,
wonderful on a HOT grill, the only beef steak I enjoy rare.
Chuck steak used to be very inexpensive but no longer, people without
TIAD have caught on.

I meant to look for chuck eye steaks recently but forgot since I hadn't
put them on my list. They truly are the unsung steaks. You had to
go bring them up, didn't you? Next time I find them they'll likely cost
as much as rib eye! LOL

U-KNOW-WHO always has bland rib-eyes or rib steaks. He doesn't know how to cook unfortunately. Rib steaks are my favorite and have been for sixty years.

Frozen New Zealand rib eye was very popular over here back in the 60's. We used to cut the stuff into thin slices to make beef teriyaki. It might have been popular because it was a pretty cheap meat. I don't know what the heck that stuff was but it was kind of nasty if you ask me. OTOH, it might be that we weren't preparing it properly.

Not sure what you mean by nasty. If you're talking about flavor, that
was the problem I had with Australian lamb until quite recently. It
had a wild/gamey flavor.

This stuff is frozen and vacuum packed and comes in a roll about 6 inches long. My guess is that it's substandard meat which is why I haven't seen it sold any other way. It has an unusual dead look to it. It looks like meat you would get when there's no fresh meat available. I'll have to investigate to see if I can turn this into something appetizing.

I used to buy chuck eye steaks when I was in my 20's. They were cheap,
tasty and very tender. I'd buy them again if I remember to put them on
my list. I haven't bought a rib eye in at least 20 years. I am not a
fan of rib eye steaks.

That's what my cell phone is good for, I put it on the list whenever
it occurs to me and it's there when I go shopping.

I don't remember seeing that cut back then, but I can tell you that the
first time I had a rib eye I loved it.

You do love your cell phone. You still have to remember to add chuck
steak to the list, regardless of the format you use for shopping.

Somewhere when I was talking about buying leeks someone mentioned the
cell phone shopping list thing again. Nope, a neighbor I ran into at
the store suggested I drive across the street to Food Lion. No need for
a cell phone to check a different store.
