Secret Family Recipe: Dole bagged cole slaw lightly dressed with
Jimmy's Cole Slaw Dressing (refrigerated; local brand, I think). I

Just because it isn't being used for gravy doesn't mean it's going to waste.
One of my basic bread recipes uses potato water. For that matter, the
_Vegetarian Epicure_ series relies on a basic potato peel stock in most of
its soups. Potato water is also useful if you're trying to culture a
sourdough starter, but since I don't like sourdough, I leave that to others.

Oh, I agree. I am from the mid-West, and I do use potato water for gravy.
It's just that I've spent all of my adult life being defensive about it and
converting a few. Potato water was always used to deglaze the pans from all
the big roasts and birds. Until I moved west, I assumed everyone did it
that way.

Central Market here had pork shoulder roast for the ridiculously low
price of $1.29 a pound. Some of them were pre-coated with Italian
spices. I bought one of the latter and made the Italian pot roast from
the vintage '98 Joy of Cooking (alias Irma, Marion, Ethan, and a cast of
thousands). It wasn't bad, but SO found that drizzling a little bit of
balsamic vinegar over each serving spiked it up. He was right.

and its one's habit to use it in the gravy making. My sister (a fine
cook) does not use it -- she thinks it adds too much starch to the
gravy. Whatever.

I know -- and am guilty of not keeping it around for such a purpose.
Unless I'm making gravy, I drain the potatoes over the sink drain.

thickener for soups, or so I seem to remember and perhaps rice water,
too. I never tried either, but since potato water is so readily
available, I use it when needed. I am not above using a mashed up
piece of potato, when I need extra thick soup.

Maybe it is a regional thing, or an old fashioned one.
