Default Roast beef dinner

We never make roast beef. No particular reason. But
we saw a roast at Costco, Prime grade. It is a large
piece of meat, a beef loin top sirloin. Froze half and
roasted half. I get nervous when I see sirloin, I'm not
a fan.

This came out tender and delicious, I made horseradish
dip and served with baked potato and English cucumber slabs.

That was a nice dinner, and lots of leftovers.
