I like them in various forms, but I can understand that people who have only had commercial meringues may have a problem with them. We had a lot of pies with meringue topping when I was a kid and I always liked it. Okay... it is airy and sweet, but it was a nice balance to the tart lemon filling. My mother used to make meringue shells and they were her stand by dessert for a crowd. She would serve them with whipped cream or ice cream and a variety of sauces; chocolate, thawed raspberries or strawberries. They were delicious. My wife learned how to do them. However, I have had commercially made meringue shells, even from good bakeries, and I did not like them at all. |

I dislike meringue, and I dislike lemon pie and lemon desserts in general. Even lemon zest in something like cheesecake or poppyseed cake is intrusive, and I don't use it. I love lemon for savories, though. So much so that my husband is kind of burned out on it. For me, meringue is about as appealing as cake frosting made with vegetable shortening. It's just sweet, with no other counterbalancing flavors. Whipped cream has butterfat goodness going for it. Cindy Hamilton |
