It's cool how pets adapt > and move on. Yup! Kitty has awesome green eyes. She's actually a rescue feral (estimated wild 7 years). Had a rap sheet a mile long and no offers for 18 months once captured and put in the adoption cycle by a no kill. In fact, 12 months of that was in a cage and she went through 6 foster homes in the other 8 months. She likes dogs. On the beagle, Iowna is a treasure but make no mistakes. She is blind in the remaining eye and has been since she was 9 so 5 years now. Glaucoma in dogs is not a happy thing. Normally you remove the eye to remove the pain but there are alternatives and Iowna had what is called'ablation' (Gentamycin treatment) in the eye she was able to retain. The rescue thought she'd have a better chance of adoption if she had an eye, even if it was blind. Grin, she's happy, healthy, a bit fat but over all, HAPPY which is what matters! Carol -- |

One of our dogs (energetic collie) went deaf and blind when he was 15 or so; until then he was very active, very rarely been on a lead in his life. I prepare Chinese hot & sour soup at home probably at least once a month, always varies by what's in the fridge. There was a popular Chinese restaurnat on Long Island, Smithtown, on Nesconset Highway, they had two versions on their menu, one was the usual type, the other a creamed corn version, was excellent and quite hot but the corn mellowed out the heat. I tried to duplicate it at home but never got it right, and can't find it on line. I'm sure it contained canned creamed corn. The restaurant across the street from where I worked had a special for $2.99. You get a bowl of the soup and then a plate of rice and Szechuan beef. Those were the most memorable lunches ever even though I usually ate by myself. Hot and sour soup is chicken stock thickened with cornstarch and flavored with black pepper, shitake mushroom, and vinegar. It's one of the few dishes where black or white pepper takes center stage. You add enough pepper and vinegar to make these ingredients predominant in the flavor profile. Your best bet is to go to a Chinese restaurant and have a bowl. Tasting is worth a bajillion words. I'll add some shoyu to get a proper brownish color. I'd recommend you ditch all the funky Chinese vegetables/fungus and stick with thinly sliced shitake, bamboo shoots, and tofu. These are added to the boiling soup along with some small pieces of pork. The pork is poached in the soup for a few minutes. Thicken with cornstarch slurry. You can add a little sesame oil if you like. Some folks will swirl in a beaten egg, I feel it gums up the works but my wife likes it that way. |

But the bigger issue is that the house is not up to code and probably never will be. The price we paid was based on getting some work done to get it up to code. Unfortunately, the guy who said he could do this for $2,000 was somehow connected to the real estate agent and when he came back, he fled quickly, telling me that he would contact my husband, which he never did. He would also not return our calls and when I pointed this out to the real estate agent, she just said she was sorry He muttered something about how he thought he could do it but then his partner said it would be at least $10,000 and even at that it still might not be up to code. Something about how if I fire started, the house would burn down if this wasn't fixed. Oddly enough, a fire did start in that very area (the garage) but I happened to be walking through there as it happened, due to a ballast burning in a light fixture. That has since been fixed but the initial problem has not been and probably never will be. I expect due to all the screw ups in this house that to get it to code it would need to be rewired plus the additional $10,000 plus. |
