Default What can be subbed for rice wine?

Same vegetarian friend is asking this. She's trying to put together a Genl. Tso's Tofu recipe from Vegetarian Times. I told her to just try a splash of sherry....no?

Tell her to use sake, at least they're both rice based.

Yeah - we thought about that. Maybe that's what the recipe really meant.

Any time I have a recipe that calls for rice wine (or rice wine
vinegar) I just use sherry. I haven't had any disasters doing this.

I concur.

This reminds me of a Judy Carne skit from "Laugh In":

"It may be rice wine to you, but it's sake to me"

upon that being said, a bucket of water was dumped on her. Of course,
this was a variation of the "Sock it to me!" gag.

I don't even know why I'm explaining this...

Sherry is fine. Sherry is a better rice wine sub than sake.

I know I bought rice wine a bazillion years ago, but I can't find it
these days without going to a real liquor store. My grocery store
carries at least a dozen different kinds of sake and not one single
rice wine. Why? No idea - that's just the way it is.

You don't say whether the wine goes into the recipe, into her, or
both. Tell her to try this:

Or make her own:

Isn't sake rice wine?

It really depends on the yeast employed in the fermentation whether wine
or beer is made from rice but sake and rice wine are very similar. It is
a matter of fact that you can make a (rather uninteresting) wine from a
plain solution of ordinary sugar and grape yeast....no grapes!
