I rarely touch a sentence unless it's so poor the the reader won't be able to follow it. Then I will restructure the sentence, keeping all the elements that work, to create a cohesive thought. Mostly that entails moving some clauses around. I just finished a book written by a British ex-pat. I checked with the boss about the spellings and was told that the book will get some publication in the UK. I left all the "our" spellings as in neighbour, but where there was an 's' rather than a 'z' in words such as realize, I replaced the s with a z. Americans can read the "u" in British spellings without doing a mental "whoa", but the 's' is strange and jogs the reader from the flow of the words. I checked with my trusty OED and found that they did not use the spellings with an 's' instead of a 'z' (realize, not realise) so I was not wrong at all.
