Default Lunch Salad


Salad for lunch. Romaine and butter leaf lettuce with cauliflower,
celery, spring onion, cheese, pepitas, pistachios, craisins, fennel
and avocado; dressed with my homemade balsamic vinaigrette. On the
plate are halkidiki olives, oil cured olives, pickled beets and
rice/almond flour crackers.
I think this will hold me until dinner.

I am not much of a lettuce salad fan, but throw in some avocado and it
becomes more interesting. I don't think I have ever had halkidiki
olives, but since I started to appreciate olives there have not been
many that did not come in a can or a jar than have not impressed me.
The rice crackers I could live without.

Add a bowl of tuna tetrazinni w/whatever pasta and it's dinner... this
is the best presentation yet. What kind of saw-seege, pepperoni,
sopressata?

Dave, the halkidiki olives are cured in a salt brine. The flesh is
firmer and meatier than other olives I've had.
They are fast becoming my favorite olive.

Have you tried Crunchmaster Multi-Seed? It is my favorite cracker. I
don't need to eat gluten free, I just think they are damn delicious.

The more non salad stuff you put into them the better they are -)
I like real Greek salads, the kind made with cucumber, tomato, onions,
olives and feta. When I make a salad for myself it has minimal lettuce.

Speaking of salads... years ago I had a Nicoise salad in a restaurant.
It was delicious.

No I haven't, thanks for the heads up. I do have a couple of cracker
recipes that I like. I bought these because I've been too busy to make
some. I will try them though, they look very good.

I used to make really good GF crackers. They had just a small amount of
finely minced onion in them. But the recipe only made 10 so it was not
something that I made often.
