![]() I'm not a baker, and have never claimed to be, although I can bake a mean loaf of bread, pastries elude me. I use box mixes for cakes, cupcakes etc...<sosueme> I prefer Duncan Hines and Von's has Duncan Hines mixes on sale for .99 I found this recipe on the back of the Fudge Cake mix. They are stinkin' good. Today I'm taking these to the volunteers that are working so hard at church. Box cake is no more artificial than ingredients used to bake from scratch, and often box cake ingredients are more wholesome, by orders of magnitude large food factories have far more control over their ingredients... I suppose you grow your own wheat, you raise chickens for eggs, you milk your own cows, you run a laboratory to make your own baking powder, and of course you use pure water, not that filthy chemical laden city water from your own tap, or bottled water from out-gassing plastic bottles filled at some gas station hose bib. Oh, and you own a cacao plantation, and a rain forest for growing vanilla beans. You have no clue what's in the ingredients you buy at the local stupidmarket... Well, I rarely make cakes but when I did, I soon realized that boxed mixes were cheaper, quicker to make and tasted just as good as scratch cakes. I used to make one called chocolate tweed. I put the same grated chocolate into a yellow cake mix. Tasted the same. |

I've never had a boxed mix or store baker cake that comes close to what a really good bakery or home made scratch cake is like in both texture and taste. I'll try to remember to post the recipes we use later as they are not on this computer. |

As for Consumer reports, I often disagree with them. I don't know what they used for comparison, but it surely was not the best. What has happened over the last generation, good taste has been lost. just look at the crap people accept as being good. Veggies and fruit that is picked and sold unripe, week old corn on the cob, seedless watermelons, ice cream loaded with gums and fillers. Many people go through life and never have a ripe peach right from the tree. Sad, really. |

Sad, really. Exactly Ed. What happened to a great degree was the generifiation of so many food products by the industrial food production machine! Box mixes of baked products can be good, but what we get today on the consumer shelf is not very good. It's certainly easier, but that's the whole aim! And being a baker, I can't see my way clear to use a boxed mix when I have a perfectly good recipe for baked good from scratch. I used to make pancakes for me and my son when he was little, and I just whipped out the Joy Of Cooking and looked up pancakes! Found a good recipe for crepes too, so made those on occasion! YUM! Some make crap, others make delightful cakes and pies. You have not found the right ones. I go to a local bakery that has fantastic bread, but I won't buy their pasties. Look great, taste bland, over prices. I go to Wright's Dairy Bakery and they have great cakes with whipped cream frosting. Cheap bakeries cover cakes with Crisco and sugar, but good ones make delightful buttercream frosting. It is not possible to make a comment that one class is good or bad since both exist. You have to find the few good ones left. |

Nowadays most all stand alone neighborhood bakeries use mixes, also powdered eggs/milk, factory made fondants/frostings/icings/fillings/ merengue powder, artificial flavorings/colorings, and all the same quickie ingredients sold in stupidmarkets only in bulk sizes... their fruits are freeze dried, fruit fillings are in #10 cans, chocolate is fake, butter is an artificicial flavor too... you name the cheapo shortcut that's what they do... you won't find a whole fresh egg in any neighborhood bakery. The last time ANY bakery peeled fresh fruit for pie has to be more than 50 years ago... even the cheese they use for cheesecake/pastries is as fake as any cheese food. Many of the new Duncan Hines cakes are damned good... I bake probably four a year... I don't bake many cakes anyway, maybe four more from scratch... and I never buy bakery cake anymore, all over priced crap except for a few in Brooklyn that still sell an honest product... I get baked goods care packages from particular dago bakeries and kosher bakeries... neither would dare sell crap, or they'll be fitted for C-Menta shooze or special circumcisions. I don't care what brand of flour you buy, ALL commercial flours contain preservatives, teh best you caqn do is buy organic wheat and mill it yourself, I'm pretty sure none of yoose big mouths has ever touched unground wheat or even considered owning a mill... yoose eat mystery meat, yoose ain't gonna mill your own grain. I'm sure I go to your house the only bread you'll have is stupidmarket genre in a plastic bag, and a freezer full of Sara Lee and the like baked goods, and the only flapjacks yoose ever eaten are fast food chemos and Eggos. I'm sure all yoose lying bastids eat box cake too... WTF, anything yoose buy in ANY bakery is box cake. |
