Default Meatloaf Falls Apart

A pound of raw beef isn't much of a meatloaf.

You want to be careful not to overmix but you may be undermixing; Get your
hand in there and mush it around some. That'll tighten up the finished
product.

I mix it in the KitchenAid using the paddle attachment. It comes
together so quickly and evenly. Of course, that's not my idea,
Kitchenaid recommends it.
