Default Fresh Peas


They are on the menu for tonight, along with BBQed shrimp. We had some
last night and I have to admit that when I looked at my plate and saw
what looked like frozen peas, but a little lighter than usual, I thought
what the heck is going on that we are having freezer burned frozen
peas. I was so wrong. They were not frozen peas. They were fresh and I
have to say they were the best peas I ever ate in my life.

I phoned my brother who hates peas and told him to get over to the fruit
and vegetable stand where my wife had bought the peas. I told him they
were certain to change his mind about pea.

The trouble with fresh peas is that they start to deteriorate as soon as
they are picked, becoming hard.
I worked in a canning factory many years ago and the trucks carrying peas
from the field to the factory were timed and if they went over a certain
limit the peas were condemned. Every day a techie went out to the fields
with a "tenderometer" to make sure that the peas were harvested at optimum
tenderness.

That is not the only problem with fresh peas. As a consumer.... fresh
peas are expensive.It isn't cheap to buy a quart of fresh peas. It is a
lot of work to shuck them. There are sometimes only 4 or 5 peas in a
pod. $4-5 and 20 minutes of work and you get only enough peas for two
small servings.
However... in this case we got 4 servings, and they were incredible.

Do you cook yours with the pods in? I tried this once as I saw some TV chef
who said they had better flavor that way. I didn't notice a difference.
And it was a PITA to pick out all of the pods.

My brother hates peas. Probably hates them more than any other food except
for maybe mushrooms. But fresh peas would not change his mind!

The trouble at my house with fresh peas is that very few of them make it to
the pot! I love eating them right from the vine, pods and all. And so did
my old cat, Maui. I'd put her on her leash, walk her to the peas and she
would just start eating!

Corn is the same way. Best done picked fresh and cooked right away.

I will say this, fresh peas have a natural sugary taste that is
completely unlike anything frozen or, heaven forbid, canned.

I suspect there are lots of people who had a "birds eye" experience with
both green beans and peas that may never come back.

We had only two kinds when I was growing up. Freshly picked from our garden
or out of a can. I like both but not they are for sure not the same taste
and texture. My brother hates both. We never had any frozen veggies when I
was a kid. But we did have frozen fruit.

I think I erred with not mentioning Del Monte - they ruined green beans
for many, whilst Birds Eye simply fought with Green Giant to marginalize
other veggies.

If you had fresh picked, bravo.

Wish I had been so lucky.

I bougth a bunch a couple weeks ago and I must agree with you: fresh peas
are wonderful. I cooked mine in a skillet over a quick soffritto (carrot,
celery an donion), with just an inch of concentrated tomato paste and had
them as a side for a cheese and salami dinner.
