Default Radish and Roasted Beet Salad

We had this for supper tonight and I think it may have changed my wife's
mind about beets. I would never have thought to combine beets, radish
and blue cheese, but I can tell you that it was delicious and even my
wife, who has always hated beets, was impressed/


8 small beets
1/4 cup olive oil
sal and freshly ground pepper
2 Tblsp fresh lemon juice
1/2 tsp granulated sugar or honey
1/2 tsp chopped fresh thyme
8 large radishes, halved if small, quartered if large
1 small head butter lettuce (not what we used)
2 oz. blue cheese crumbled


preheat oven to 450 F

Peel beets and cut each into wedges, toss with oil and salt and pepper.
Roast in oven for 45 minutes stirring occasionally. Cool. Can be
prepared ahead of time.

For the dressing, whisk together lemon juice, sugar, thyme and oil,
season with slat and pepper

Add beets and radishes to the dressing. Arrange lettuce leaves on a
plate , top with radish and beets and sprinkle with blue cheese.
