I typically put together a lot of stuff by eyeballing and in a dough,
the amount of liquid needed is not determined by weight or fluid oz but
by a variety of conditions that varies widely and you should mix to
consistency instead.

OTOH, weighing is a fun thing to do. We have a neat digital scale and I
use it to measure out 8 oz. amounts of coconut haupia mix because I have
no idea how one would measure out 1/6th of a 3 lb bag without a scale.

It sounds about how I'd do it. I like this recipe because there's no
milk added and it includes vanilla and salt which many recipes do not.
I'd add some water but that's because I'm a cheapskate. The good stuff
has less water added.

I bought a big bag of Noh's Haupia mix from Costco because I went to
school with the guy and a mixture of sugar and ground coconut is useful
in baking. Just for the heck of it, I made some haupia and I liked it.
The mix contains carrageenan which gives it a different texture and
improved stability at room temperature. It's the kind of haupia that
you'd get at a Waikiki luau but your recipe is better and tastier. My
son said the mix haupia was OK but he prefers the other kind. What can I
say? I'm a sucker for carrageenan. :-)

Heh, nothing wrong with that. I'm not against mixes, but haven't seen
your haupia mix, so I was just wondering how to do it the old
fashioned way. Coconut is at the top of my "flavors I like" list.

Thanks! Your recipe is just swell. I find recipes that use milk to be
goofy.

I'm a texture person too... never gave coconut flakes a second
thought, so that obviously doesn't bother me.

Slimy, undercooked, egg whites are what make me barf.

I had no idea what carrageenan is so I had to check it out. Aren't you
worried about what wikipedia says about it?

"Scientists have raised serious concerns about the safety of carrageenan
in food, based on laboratory animal studies showing gastrointestinal
inflammation, ulcerations and colitis-like disease in animals given
food-grade carrageenan in their drinking water or diet.[2] [3][4] Some
physicians advise avoiding consumption of foods with carrageenan,
especially for people with gastrointestinal symptoms.[5]"

Thanks for the info. I have not heard this but I'm not too worried.
Seaweed-based gels are used in a lot of Asian desserts. OTOH, I don't
enjoy gastrointestinal problems. Like most Asians, I have to be careful
about milk. Now that's some scary stuff!
