I like this recipe because there's no milk added and it includes vanilla and salt which many recipes do not. I'd add some water but that's because I'm a cheapskate. The good stuff has less water added. I bought a big bag of Noh's Haupia mix from Costco because I went to school with the guy and a mixture of sugar and ground coconut is useful in baking. Just for the heck of it, I made some haupia and I liked it. The mix contains carrageenan which gives it a different texture and improved stability at room temperature. It's the kind of haupia that you'd get at a Waikiki luau but your recipe is better and tastier. My son said the mix haupia was OK but he prefers the other kind. What can I say? I'm a sucker for carrageenan. :-) |

Coconut is at the top of my "flavors I like" list. -- Food is an important part of a balanced diet. |

"Scientists have raised serious concerns about the safety of carrageenan in food, based on laboratory animal studies showing gastrointestinal inflammation, ulcerations and colitis-like disease in animals given food-grade carrageenan in their drinking water or diet.[2] [3][4] Some physicians advise avoiding consumption of foods with carrageenan, especially for people with gastrointestinal symptoms.[5]" |

I have not heard this but I'm not too worried. Seaweed-based gels are used in a lot of Asian desserts. OTOH, I don't enjoy gastrointestinal problems. Like most Asians, I have to be careful about milk. Now that's some scary stuff! |
