Default Slab pie vs. pocket pies

I like to make Boston Cream pocket pies. Boston Cream is like a mix of
pastry cream and whipped cream. I dip the Boston Cream pocket pies in a
chocolatey, sugary glaze. The glaze is much more sugary than ganache.

It seems so much to easier to make a slab pie though, instead of pocket
pies. A slab pie is two layers of dough, on a sheet pan, with the filling in
between.
