Default Quest for nonPasteurised sauerkraut...

Did I find it? I purchased today, a 1 liter jar of Strubs wine
sauerkraut. It was the only brand sitting in the cooled area beside
the meat department. The other brands are on store shelves.
So I reasoned, since this is being kept cold, it might be non
pasteurised. Am I correct? Pasteurisation destroys much of the
goodness found in sauerkraut.
The label says Strubs Wine Sauerkraut.

Pasteurized sauerkraut? What the heck is that? I never heard of it.
My German g'mama made sauerkraut every year, and there wa'nt no
daggone pasteurization involved.

We used to make it too; no pasteurization. But the stuff on the
regular room temperature shelf at the SM is pasteurized. I'm guessing
that the stuff in the cooler at the SM is non pasteurized.

I did. It's a good idea, but they don't have sauerkraut at all.
There is only one health food store here in Kitchener that I know of.
Maybe there are more, so I should check them out if there are. There
are many supplement shops, but health food stores???

Cannot tell you anything about that Strubs product, but correctly
produced sauerkraut needs no pasteurisation, nor refrigeration. Raw,
unpasteurised, unrefrigerated sauerkraut is sold out of the barrels at
markets and butcher shops here in Germany. Raw commercially-packed
unpasteurised, unrefrigerated sauerkraut in plastic pouches is sold in
supermarkets. One example is Leuchtenberg brand "Frisches Wein
Sauerkraut" I have here. It is explicitly labelled as non-pasteurised
and it is stated that the sealed pouch requires no refrigeration. (I
keep it refrigerated, all the same, but only because I like my raw
sauerkraut cold if I choose to eat is "as is" - which is often.)

I haven't seen any sauerkraut here that is labled non-pasteurised. We
do have a certain brand that is in a bag, and is kept on a
refrigerated shelf. Also, there is a Polish Delicatessen that sells
sauerkraut out of pails; kept refrigerated. Maybe that's the real
deal. I asked one girl that worked there if it was non pasteurised,
and she didn't know.
We used to make it in five gallon crocks.
btw, this Strubs brand sauerkraut that I purchased is simply
delicious.
