Default Crock pot question

How much night before prep can be done for a crock pot recipe? Like, how do
things like carrots and onions hold up in the fridge if they're diced, sliced,
chopped etc the night before? Also, can meat be browned then put in the fridge
overnight? I just started using a crock pot and I'm just curious how much I can
do the night before so I'm not doing it early in the morning. Thanks.
