Ravioli etnici alla pandora
They are filled with feta cheese, eggplants pulp, raisins, sage and
spices. Seasoned with a curry-onion cream. Garnished with minced toasted almonds, eggplants skin and sage. Try! Category: First dish Yield: 3 servings Total time: 2 hours Source: Pandora For the dough: 200 gr. Flour. 2 Eggs Filling: 150 gr feta cheese - (or ricotta cheese if you -haven’t) 1 Eggplant - pulp 1tbsp Raisings 6 Almonds 4 Sage leaves - minced 2 tsp. mix of spices for cuscus 1 Egg Seasoning: 250 ml cream 3 tsp curry powder 3 sage leaves 1Tbs almonds 1 onion 4 TBS oil - EVO Garnishing: 3TBS almonds - toasted skin of eggplant PROCEDU Prepare eggplants: cut eggplant in two halves. Wrap them in aluminum foil and put in the oven (200°C) for about 40’. When ready, extract pulp with a teaspoon (keep the skin for final garnishing). In a bowl, put the eggplant pulp. Add: feta cheese (minced), minced raisins, minced almond (toasted), minced sage and 2 teaspoon of cuscus spices mix. For a speedier work you can put all these ingredients (except feta cheese) in a robot. Add an egg making an homogeneous mixture. Make egg pasta dough as usual. At the end, roll it with pasta machine at the thinner degree. You will obtain about 4 pasta sheets. Put a big tbs of filling over a sheet of dough, put other teaspoons at proper distance from each other . Cover with another pasta sheet and cut ravioli with the proper tool (I have used a 7 cm. square tool). Set aside. Prepare the seasoning and garnishing: In a large frypan, put 4 TBS oil, and minced onion . When it is golden, put inside cream an curry powder. Let it boil for about 5 minutes. Set aside. In an antisticking frypan (without oil) put the almonds and toast them for some minutes. Boil your ravioli in salted water for about 5 minutes. Drain and put in the frypan with sauce. Let them season for some seconds. Put in dishes garnishing with minced almonds, the skin of the eggplant cut in strips or cubes. Put in the center the whole sage leaves that were in the sauce.
