Default Orin's Cedar-Planked Salmon

Orin's Cedar-Planked Salmon
Categories: Seafood, BBQ, Grill, USA, Main dish
Yield: 8 servings

1 ea 2 lb salmon fillet 1" thick
1 ea Cedar plank 14"x7"x1" untreated
1/2 c Tomato vinaigrette dressing
1/4 c Fresh parsley minced
1/4 c Oil-packed sun-dried tomatoes minced
1 tb Olive oil

Soak your cedar plank in water for 4-8 hrs.
Place a weight on top of plank to keep it submerged.
Pre-heat your grill to med-heat.
Mix dressing, parsley & tomatoes then set aside.
Brush top of plank with olive oil.
Put yur salmpn on top of ypur plank plank then put on grill.
Cover grill with lid.
Grill for 10 mins.
Brush salmon with our dressing mixture.
Grill salmon for 10 more mins. until it flakes easily with a fork.

When salmon "flakes easily" it's overcooked, to my taste. As to
planking, I posted these tips in 2008:
"here's what the Alaska Seafood Marketing Institute has:

"Wild Alaska Seafood Plank Grilling Tips

"Planking is a traditional Northwest-style of cooking using aromatic
pieces of wood. It’s a great way to add subtle flavors to your wild
Alaska Seafood. Many stores sell pre-cut planks now, but it’s just as
easy to make your own.

"Easy Planked Seafood:

"Go to your local hardware store and purchase untreated lumber.
Cut planks into any size you desire.
The best wood choices for planking are Cedar, Alder and Oak.
Presoak the plank in water for 30 minutes – two hours.
Pat planks dry with paper towels and spray-coat or lightly oil one
side of the plank.
Season seafood lightly with an herb blend or just salt and pepper. Go
easy, as you don’t want to overpower the flavor you will get from the
plank.
Preheat the grill to medium-high.
Place the planked seafood on the grill over indirect heat and close
the lid.
Turn the heat down to medium.
Check seafood frequently after 10 minutes.
Seafood changes from translucent to opaque as it cooks and will
continue to cook after it is removed from the heat. Cook just until
opaque throughout.
