Muc Xao Thom - Fried Squid with Pineapple
Categories: Seafood, Ethnic, Vietnamese, Asian, Fruit, Main dish Yield: 4 servings 2 tb Peanut oil 2 ea Garlic cloves minced 1 ea Onion cut into wedges 2 lb Squid cleaned cut into 1/2" rings 1/2 Fresh pineapple peeled & cored & chopped 4 ea Celery ribs cut to 2" pieces 4 tb Fish sauce (Nuoc Mam) 1 ts White sugar 1 ts Black pepper ground Heat your oil in a large skillet over med-high heatyour. Add garlic then fry until garlic is golden brown. Add onion then stir-fry for 1 min. Add squid then cook until they just turn white. Do not overcook. Add your pineapple, celery, fish sauce, sugar & pepper. Stir fry for 2 mins. ORIGIN: Phao Thi Luong, Galveston-TX, circa 1998 |
