the dh was at the store yesterday, he found smoked hapork shanks on offer so
he got a package... then he looked around for something to have with them, in the store he was in they had lots of beans, dry and canned, he settled on a 15 bean dry package with a flavor package you put in at the end... we got one we will both love, it does NOT have black eyed peas, and it is not cajun spiced which is usually the only flavor of this we see... he is not a hot spicy eater... he read me both versions of what is on the beans as for their instructions, and i worked out what is practicle to do, i have the shanks braising in vegetable broth and the beans soaking... these multi kinds of bags always shock me about how much water they soak up so i have added water a second time... hopefully by the time the meat is ready to cool and take off the bones the beans will be ready to go into the broth, the pork smells heavenly... this will make several servings of ham and beans as it is a two pound bag, so i just checked my supply of containers and all i have to do is eat dinner let it cool, rearrange the freezer and package, this is gonna be great as we are getting busy with work and other obligations. if we were in the house, it would have been mixed with fat and offerred to
the out cats over cheap kibble in the winter... here at the hotel we are so limited on space, spices have taken the back seat so you make do... i just turned them off for the night... not even sure if they are done but am getting very tired. I just buy the bean mixture for the beans and throw away the flavor package... then proceed making bean soup as normal. -- I love cooking with wine. Sometimes I even put it in the food. |

But how do you get that great industrial taste without the "flavor packet"? |

I didn't like it at all, too many different bean flavors/textures... was like stuffing a handful of mixed nuts in your mouth all at once (TIAD). I've already made the mistake of mixing two different brands of canned baked beans; Bush'e and B&M just don't work well together. A blend of many different beans look nice in a jar as a decoration but don't taste good all cooked together. It's like women whose undies don't match... pink panties with a yellow bra makes them look like they live in a sanitarium. |

If that packet is added at the beginning the salt will prevent all those different beans from cooking evenly, they're not all going to cook evenly anyway but salt makes them cook more unevenly and will take a lot longer too. Cook the beans until done and then add the contents of that packet a little at a time until it tastes right to you, you'll probably only need half. Use your own herbs and spices to make up the difference. |
