You could probably substitute anything. I have corn flour (not
cornstarch) that I can buy in bulk, so I'd try it first. I also have
a bag of plain pancake mix from Trader Joe's instead of (expensive)
gluten free flour mix that I use for general baking. I'd use some of
that if I didn't use corn flour first. I've used it in recipes that
ask for a little all purpose flour and it has worked very well. I
know you don't have a Trader Joe's in your area but I'm surprised you
don't already have something like that in your cupboard that you
already know would work.

What I tried to say wasn't very clear. The pancake mix from Trader
Joe's is gluten free and it is less expensive than the gluten free
"flour" stores sell for beaucoup bucks.

There must have been a dozen or more variations of pasta and noodles at
my supermarket today. There isn't a Trader Joes in 600 miles. Many
supermarkets are stocking more gluten free products than ever these days.
