Norwegian Beef Soup

1 1/2 lbs. of round steak, cut into 1" chunks
1 large onion, sliced
2 T. butter
2 C. strong beef broth
1 lb. of canned diced tomatoes, with juice
2 green peppers - remove seeds, and slice into rings
1 medium cucumber - peel, remove seeds, and dice
Salt and pepper to taste

1 T. Wondra flour
1 tsp. paprika
1/2 C. sour cream

Brown the beef and onion in the butter until onions are golden and
beef is brown. (Do not crowd the beef in the pan.)

Put the broth, tomatoes, green pepper and cucumber in a saucepan and
add the beef and onion, along with the pan juices. Simmer for 2
hours, uncovered.

Mix the sour cream thoroughly with the Wondra and paprika. Add to the
soup, stirring constantly, and bring back to a boil. Remove from heat
and serve hot. Makes about 4-6 servings.
