Spaghetti Sauce Recipe
Easy Italian-Style Tomato Sauce

* 2 to 3 tablespoons olive oil
* 2 medium onions
* 1 medium green pepper, chopped
* 1 clove garlic, minced
* 1 tablespoon salt
* 1/4 teaspoon pepper
* 1 can (6 ounces) tomato paste
* 2 cans (14.5 ounces each) diced or crushed tomatoes
* 1 teaspoon dried leaf oregano
* 1/2 cup grated Parmesan cheese

In our house, maybe 6--8 portions. It will cook down somewhat. We don't
like pasta swimming in sauce.

So, definately enough for two with decent leftovers.

Side dish or main? Depends on how much wine and water you add, and

I'd serve cheese on the side.

How many it feeds is totally dependant on what the sauce is served
with and appetites. For me that's enough for 1 pound pasta (3-4
portions), 6 meata balles heros, 6 eggplant/veal parm. I would double
the recipe and freeze the left overs... actually if I'm going to
bother I'd prepare 6 times that recipe and freeze 1 pt containers.

It will make a bit more than a quart which should
serve 4 generously or 6 adequately, IMO.

This is the other Marcella Hazan tomato sauce recipe we usually use,

though the Marcella Hazan recipe for sauce with onion only, especially with
a slug of butter is great.
