Cooked vegetables are more >nutritious. If you chew your food well (even if you don't) your body will absorb the nutrients it needs. This is a silly discussion anyway... the healthy human body stores most nutrients for far longer than it needs between the time folks eat... if you live in the US you will never be nutrient deficient due to whether your veggies are cooked or not... just eat your veggies any way you want and you'll be fine... in the US the problem is not what to eat, the real problem is what not to eat. Nobody gets obese eating veggies, you can eat all you can swallow and you won't gain an ounce, in fact the more veggies you eat (any veggies cooked or raw) the more pounds you will lose. In fact it's not possible to gain weight eating potatoes and rice, all you want... it's *only* the fat one adds that makes one obese. |

With pressure cookers you cook with less liquid and for a shorter period thus preserving most vitamins. This is easily checked up via google. |
