Just got hold of a couple of nice tuna steaks for dinner tonight. Thinking
of rubbing them with a small amount of salt and pepper and soaking in lemon juice. Will be serving with pasta and probably some corn on the cob (strange mix I know, but it needs to be eaten ![]() Not exactly setting me alight though .. anyone any other nice and relatively simple ideas? a |

Tuna Fish Cakes, From the N. Y. Sunday News, Oct. 10, 2004 By Dolores Grier Serves 2 1 (6-ounce) can solid white tuna 1/2 teaspoon ground black pepper 2 tablespoons wheat germ 3/4 teaspoon spicy brown mustard 1 egg 1/4 teaspoon garlic powder 1 scallion, finely chopped Flour for rolling Corn or safflower oil Parsley for garnish In a large bowl, combine all ingredients except flour and oil. Mix thoroughly. Form into cakes. Roll in flour. Deep-fry in hot oil until browned on both sides. Remove and drain on paper towels. Place the cakes on a platter and garnish with parsley. If you like, serve with sautéed mushrooms. (To make sautéed mushrooms, cook 6 sliced fresh mushrooms in 1 tablespoon of butter until soft. Spoon over the tuna cakes.) |

Yeah. Don't soak them in lemon juice. The lemon flavor will overwhelm the subtlety of the tuna. Grill or sear the tuna and leave the center red. A light vinaigrette (maybe throw in some dried tomatoes and a chiffonade of fresh basil) will serve to accent the tuna and can be used to dress the pasta as well. Contrast with buttery corn. Simple and tasty. Fresh fruit for dessert. Pastorio |

Don't have any basil, but coriander would probably go ok in its place. Think I might combine your idea with Kilikini's ![]() a |
