I don't have a recipe for tuna steak, but I saw an interesting recipe
for canned tuna in yesterday's Sunday News and fresh tuna could
possibly be substituted.
Tuna Fish Cakes, From the N. Y. Sunday News, Oct. 10, 2004

Serves 2
1 (6-ounce) can solid white tuna
1/2 teaspoon ground black pepper
2 tablespoons wheat germ
3/4 teaspoon spicy brown mustard
1 egg
1/4 teaspoon garlic powder
1 scallion, finely chopped
Flour for rolling
Corn or safflower oil
Parsley for garnish
In a large bowl, combine all ingredients except flour and oil. Mix
thoroughly. Form into cakes. Roll in flour. Deep-fry in hot oil until
browned on both sides. Remove and drain on paper towels. Place the
cakes on a platter and garnish with parsley. If you like, serve with
sautéed mushrooms. (To make sautéed mushrooms, cook 6 sliced fresh
mushrooms in 1 tablespoon of butter until soft. Spoon over the tuna
cakes.)
