Mother's Ice Box Cake (c. 1945)
Whip: 1 pint of cream Cook together, stirring constantly, until sugar melts: 2 eggs ¾ cup sugar Mix: 1 package lemon Jell-O (small) ½ cup hot water juice of one lemon (or you can use 2 Tbs bottled lemon juice) Add: 1 can crushed pineapple with juice Mix and SLOWLY pour into buttered ice tray (double tray) coated with graham cracker crumbs Sprinkle graham cracker crumbs on top Put in freezer and allow to freeze Jell-O and fruit may be changed to strawberry, peach, etc. for variety |
